Does anyone have an idea of the way to implement a carousel menu in an application ?
(not for the home screen like the UltimateFaves application --> http://android-france.fr/2009/10/07/un- ... r-android/ ) ?

I don't think it is implemented in the standard APIs.

I would implement something like this in OpenGL ES.
You could draw the menu items on flat polygons as textures rotated about a central point.
You would need to offset this rotation for each so that each menu item always appear to face the user.
Then detect the swipes with touch events to spin it around.

I have never used OpenGL APIs before but I'll try to follow your advice. I'll post again here if I met some issues.

There seems to be a few examples of this but in Javascript if you Google "Image Carousel"
which may help with some of the maths you'll need for this
