An easy way to do this is replacing the res/drawable/icon.png with the picture of your choice

overwrite the file <project>\res\drawable\icon.png with the icon you want for your app

Android will resize the icons to appear all the same size on the launch-tab;
so I prefer to do this myself (using the size of the original icon) because this way I know exactly what my users will get (no blurring or the like).

size is 72 X 72

and i am using Android 2.0, so the icon.png file is in
drawable-hdpi, drawable-ldpi and drawable-mdpi folder.

and these 3 folders provide sizes, which are choosen on different resolutions.

drawable-hdpi 72x72
drawable-mdpi 48x48
drawable-ldpi 36x36
