Where are the file associations set?

Hello,

somenone could please tell me, where Android 2.3.3 sets the file associations for the different file types?
How does the OS knows with which App to open all the files?

I have installed Adobe Reader on my Galaxy S2 and now all unknown files have the AR-Icon and the Reader wants to open them when double clicked.

I would like to change this.

Hello!
Is this an opensource OS but nobody knows it but the real developers?
Or is just this forum a kind of dead?

When I ask such a simple question for the OS Windows, I would earn a lot of laughter, because there are a million answers for this in the internet.
But Android must be a big secret, because not a single post is handling this question.
What is this?
